Make It Monday- Mini Caramel Pecan Apple Pies

Are you looking for one more Thanksgiving treat?  This is the only apple pie I like.  The salted caramel, pecans and crumb topping make these little treats divine.  Of course you can make one big pie,
but the mini size lets your guest indulge in a lot of treats without feeling too guilty:) These pies are quick and easy to make.  You need:

2 pie crusts- store bought or your own- I buy
1 jar of caramel sauce - salted caramel is best
1/2 cup pecans diced small

Apple Filling:
1/2 cup sugar
3 Tablespoons all purpose flour
1 teaspoon cinnamon
1/8 teaspoon salt
6 cup apples- peeled and diced small- they need to fit in the cupcake tin. I use half Fuji and half Golden Delicious apples

Crumb Topping:
1 cup brown sugar
1/2 cup all purpose flour
1/2 cup quick cooking oats
1/2 cup butter softened

Using a circle cutter or upside down glass, cut out circle in your pastry dough.  Gently press into regular size muffin/cupcake tin.  Use approximately a 2 1/2 inch cutter.

Mix together first 4 ingredients for filling.  Add apples and gently toss until the apples are coated.  Let it sit for 20 minutes.
For the topping, mix together brown sugar, oats and flour.  Cut in butter until it resembles course crumbs.
Fill each pie crust with the apple mixture and then cover with crumb topping.
Bake in preheated 375 degree oven for about 25 minutes.  Pies should be golden and bubbly.  Remove from oven.  Drizzle with caramel sauce and then sprinkle with pecans.  Run a knife around the edge of each pie and remove from pan immediately.

  3. So here's a crazy question.... if all I have on hand is regular caramel sauce, is it possible to stir in sea salt to get the same taste??
