Make It Monday- Leprechaun Lunch

Happy Monday- The inspiration for today's Leprechaun Lunch came from two places- my dear friend Heather and an idea for party popcorn that I found on Pinterest.  Heather was over last week when I was making my Catch A Rainbow Jars and came up with the adorable Leprechaun Lunch phrase.  ( So clever- I am really lucky to have her as a neighbor as well!)  Of course, loving alliterations, my brain immediately started clicking away and I remember how much I loved the idea of the party popcorn.  It is perfect for St. Patrick's Day.  The white popcorn reminds me a bit of clouds at the end of a rainbow and what would leprechauns like more than rainbow sprinkles?  Whipped up a quick sign and wha-la.  Now, not sure how many leprechauns we'll attract but my kids can't wait to eat this fun treat.

Supplies: white melting candies, rainbow sprinkles, white pop corn and M&M's

Pop your popcorn and melt you white chocolate.  Spread the popcorn on a cookie sheet but do not dump the whole bag out, otherwise you may have unpopped kernels in your mix.

Pour the melted chocolate over the popcorn and mix well.

Sprinkle with the rainbow sprinkles- Once you do this do not mix the popcorn otherwise you will coat the sprinkles and they wont be rainbow anymore.

Once the mix has set (this may take an hour or longer) add in your M&M's.

Serve in a big bowl or make into individual snacks.  For the individual snacks, I only used the green M&M's

Make It Monday- Catch A Rainbow

Happy Day- I have been soooo busy the past few weeks putting together a birthday party for my little one.  It was Saturday.  The weather was great and the girls all had fun.  Success.  I can't wait to share it with you over the next few weeks!  Today, however, is Make It Monday.

With St. Patrick's Day right around the corner, I thought these rainbow cakes in mason jars would be a great way to celebrate the holiday.  I got the ideas for the cakes on pinterest but decided to add the phrase and label to create a cute little favors (wrapped with a bow). You could also do a healthy version of catch a rainbow by using fruit instead of cake.  In my fruit rainbow, I used purple grapes, blueberries, kiwi, pineapple, mandrain oranges and strawberries.  Cut the fruit into small pieces so the its easier to make distinct layers.

Rainbow Cakes

Supplies: white cake batter, mason jars, food dye, white frosting, labels

 Divide your batter into 6 bowls.  Add your food dye and mix.

Put the batters into ziploc bags.  This will make it easier to fill the jars without getting the batter all over the side.

Cut the tips off the bags and layer the batter into the jars.  Only fill the batter half way up the jar.  No higher.  Bake at 350 degrees for about 18 minutes.  Once the cake is cool add your "cloud" or frosting.

Top with a label and ribbon and your done.
