Nothing says summer more than fresh berries.  This is a yummy, light, and relatively simple summer dessert.  Perfect for all your summer parties.

You need:

Angel Food Cake- Mine is store bought
Fresh Mixed Berries- lightly sprinkled with sugar (optional).  Let sit for an hour before assembling.

For the Cream Filling:
1 quart plain yogurt
1 cup sugar
zest from 1 lemon
1 tsp. fresh lemon juice
1 container Cool Whip

1. Line a stainer with paper towels.  Pour in the yogurt and let drain for at least 4 hours to over night.  The yogurt will become much thicker.

2. Mix sugar with lemon zest.
3. Once yogurt is drained, combine sugar mix, yogurt, and lemon juice.
4. Gently fold in Cool Whip until well combined.
5. Put cream into piping bag

To Assemble
1. Cut cake into 4 layers
2. Put the bottom layer down on your serving piece and pipe a thick layer of cream around the center of the cake.

3. Scatter berries on top of the cream and then pipe another layer of cream on top of the berries.

4. Top with the next layer of cake and repeat.

Yummy! Yummy!  Off to a great week.  Please take a second to vote.

Jenny

Summer Gifts

Even though we love school and our teachers, we are counting the days until summer in my house!  Here are 2 tags and 3 great ideas for end of the year treats for classmates or neighbors.  Also, use them for a quick pick me up treat for your coworkers.  Wrap up a beach ball, pop rocks or gumballs, add the tag and you're done!

The gumball tubes are available in my Etsy Store.  The tags I will happily send you for free if you

Yellow

As the temperature is finally cooling off in Southern California, I wanted to share one of my favorite parties of the past summer.  I am lucky to be part of a group of eighteen (yes! that's a lot) wonderful families who hold a family BBQ each Friday night.  This summer the theme for the BBQ helded at my house was yellow-  anything but everything yellow- soft butter yellow not school bus.  It was so fun and made even better by everyone coming in color.  For dinner, we had fried chicken, yellow submarine sandwiches, yellow fingerling potato salad, grilled corn salad, caprese salad with yellow tomatoes and deviled eggs.  Dessert included banana creme pie shooter, mini lemon merguine tarts, pound cake with yellow peaches and honey creme fraiche, and lots of yellow candies.  The hit of the dessert table turned out to be the yellow Twinkies and yellow Zingers.  I always like to include something like these treats that people love but wouldn't necessarily buy for themselves as an adult. It adds a bit of whimsy and nostalgia to the party and leaves people with the right amount of comfort.
